This recipe will teach you how to make Zucchini Casserole. It is a quick and easy recipe to make. Zucchini Casserole is an excellent way of doing a casserole recipe. This has a great flavour with the mixture of zucchini, carrots , onions, sour cream, mushroom soup and chicken flavoured stuffing mix what a great taste sensation.

Zucchini Casserole Ingredients

6 oz packet chicken flavoured stuffing mix
5 cups thinly sliced zucchini unpeeled
1 can cream mushroom soup
1/4 cup chopped onion
1 cup sliced carrots
1 cup sour cream
1/2 cup butter

Zucchini Casserole Method

The first thing to do is preheat the oven to 350 degrees. Take a large saucepan of water and put the carrots in it and boil for 6 minutes and then add the zucchini and cover and boil another 6 minutes. Take a medium bowl and put the butter in it and microwave it till melted and then add the stuffing mix and stir until moistened. Spread 2/3 of the stuffing mixture in the bottom of a 9 x 9 inch casserole dish. Take a strainer and drain the vegetables then put them in a bowl and mix with the soup, sour cream and onions and then pour this mixture over the stuffing mix and then sprinkle the rest of the stuffing mix over the top. Put the Zucchini Casserole in the preheated oven and bake for 45 minutes.
