PYRAMIDS RECIPE
This recipe
will teach you how to make Vegetable Pyramids. It is a quick
and easy recipe to make. This recipe is made with mediterranian
vegetables so make this wonderful recipe when eggplants are
plentiful. These Vegetable pyramids are wonderful topped with
basil and they make a stunning starter to a meal. The Vegetable
Pyramids are great made with fresh mozzarella if you can get
it. I really enjoy making these for my family as they really
enjoy them.

Pyramids Ingredients
2 Tbs pesto
1 Tbs olive oil
oil for greasing
salt and pepper
2 firm tomatoes
1 large eggplant
200g mozzarella
2 sprigs fresh basil chopped
fresh basil leaves to garnish

Pyramids Method
Heat the oven to 200 degrees.
Cut the ends off the eggplant then slice it into twelve 1cm
thick rounds and place them on a greased non stick baking
tray making sure not to let the sides touch each other. Bake
for 9 minutes each side. Place the tomatoes in a bowl of boiling
water for 40 seconds then drain well then run cold water over
them to refresh. Peel off the skins then cut the tomatoes
into 12 thin slices. cut the cheese into 12 thin slices. Take
the 12 rounds of eggplant and spread pesto on one side of
each slice then top each round with a slice of tomato and
mozzarella and season with salt and pepper. Add chopped basil
to each pyramid and drizzle with olive oil. Bake for 10 minutes
or until cheese is just beginning to melt. Garnish with basil
leaves and serve straight away.

CHOY BAU RECIPE
This
recipe will teach you how to make San choy Bau. It is a quick
and easy recipe to make.
This is a wonderful recipe to serve as an appetizer
when you are having an asian meal. This is also a great appetizer
for children as they think it is so special and they will
eat every mouthful of it. The flavours of the sauces mixed
with the rest of the ingredients give the San Choy Bau a exceptional
flavour.
San Choy Bau Ingredients
2 tsp
sugar
2 tsp soy sauce
500g
minced pork
1
Tbs hoisin sauce
2 Tbs vegetable oil
1
Tbs oyster sauce
2 spring
onions sliced
1
clove garlic chopped
8 lettuce leaves washed and drained
2
tsp cornflour mixed with 1/4 cup water
227g tin water chestnuts drained and chopped
San Choy
Bau Method
Add
the oil to your wok and heat it over a moderate heat then
add the garlic and cook for 40 seconds or until fragrant.
Add the minced pork making sure to break up any lumps with
a spatula and then cook for 6 minutes or until mince is slightly
brown. In a small bowl mix the sugar, oyster sauce and the
soy sauce. Add this mixture to the wok with the water chestnuts
and spring onions then toss for 2 minutes then add the cornflour
mixture to thicken. Shape the lettuce leaves into a cup shape
then divide the mince mixture into each lettuce cup then drizzle
each one with some hoisin sauce. Eat the San Choy Bau while
hot.
