ROAST TURKEY WITH CHICKEN AND PORK MINCE STUFFING RECIPE

Roast Turkey with Chicken and Pork Stuffing.

Roast Turkey with Chicken and Pork Mince Stuffing Ingredients

4 kg whole fresh turkey

Stuffing:
salt and pepper
250g pork mince
1 cup breadcrumbs
30g butter softened
250g chicken mince
1/2 cup chopped pecans
1 white onion finely chopped
1 stalk celery finely chopped
2 green apples peeled, cored and chopped

Sherry Gravy:
1/4 cup sherry
3 Tbs plain flour
2 cups chicken stock

Roast Turkey with Chicken and Pork Mince Stuffing Method

Preheat the oven to 200 degrees then remove the turkey from the packaging and discard any excess fat and rinse the cavity and pat dry inside and out. Combine minces, breadcrumbs, apple, onion, celery and pecans in a large bowl then season with salt and pepper. Spoon the stuffing loosely into the cavities of the turkey then secure the neck flap tightly with a skewer and tie legs together with kitchen string. Place turkey on a rack in a large roasting pan and smear softened butter all over the turkey. Pour 1 cup of water into the pan then cover with a sheet of baking paper and then foil to prevent the turkey from drying out. Roast for 30 minutes then reduce oven temperature to 180 degrees. Bake for about 2 hours removing the foil and paper for the last 30 minutes to crisp the skin. Remove the turkey from the oven and transfer to a platter and cover with foil. Stand for at least 20 minutes before carving. Serve the Roast Turkey with Chicken and Pork Mince Stuffing with baked vegetables, peas and sherry gravy.

Sherry Gravy:
Drain fat from the pan and heat the pan juices over medium heat and sprinkle over 3 tablespoons plain flour stirring until smooth. Cook stirring with a spoon for about 5 minutes until golden then add 1/4 cup sherry and 2 cups chicken stock stirring until smooth. Bring it to the boil and then simmer until thickened and season to taste then strain into a gravy jug and keep warm.

CHRISTMAS HAM RECIPE

Christmas Ham.

This recipe will teach you how to make Christmas Ham. It is a quick and easy recipe to make. Now if you ever wanted to cook a sensational ham for christmas just try this recipe it is absolutely fantastic. I like to decorate it by putting some baking paper around the bone and tie a big ribbon around it before I put the Christmas Ham on the table.

Christmas Ham Ingredients

1 egg yolk
4 kg half leg ham
2 Tbs brown sugar
2 Tbs dijon mustard
1/4 cup lime marmalade
200g honey cashews finely chopped

Christmas Ham Method

Put the oven shelf in lowest position of the oven and preheat to 160 degrees then line a large roasting pan with baking paper. Remove the rind from the ham by gently running your thumbs between the rind and the fat of the ham. Cut the rind off at the shank leaving the shank covered with the rind and using a sharp knife score the ham fat in a criss cross pattern taking care not to cut more than 5mm deep. Place the ham into the prepared roasting pan. In a bowl combine the marmalade, sugar, mustard and egg yolk and whisk until smooth. Brush the mixture liberally over surface of the ham then add nuts to the rest of the marmalade mixture and stir to coat. Spoon nut mixture onto upper side of ham and press on firmly. Cook for 1 hour rotating the ham every 15 minutes to brown evenly then let stand for 10 minutes before slicing. Serve the Christmas Ham hot or cold.
