APRICOT
SHERRY TRIFLE RECIPE
This recipe
will teach you how to make Apricot Sherry Trifle. It is a
quick and easy recipe to make. At christmas we usually have
all the family plus visitors so I make up all different desserts
and I always make two trifles one with the sherry in it for
the adults and one with pineapple juice in it for the children
and people who do not like sherry in there trifle. the Apricot
Sherry Trifle is a good dessert to have as it goes further,
easy to make and looks great on the christmas dinner table.

Sherry Trifle Ingredients
1/2 cup
sweet sherry
2 cups prepared custard
450g packet sponge rolls
300ml carton thickened cream
825g can apricot halves drained
strawberries and chopped nuts for decorating
10g packet red jelly crystals set in a shallow tin

Sherry Trifle Method
Cut the sponge rolls into 1cm
slices and then use half the slices to line the base and sides
of a beautiful glass bowl then sprinkle slices with half the
sherry. Arrange half the apricots on top of the cake and then
cover with half the custard. Chop the jelly into cubes and
sprinkle half over the top of the custard. Then you do the
same again first the cake then the sherry, apricots, custard
and jelly. Beat the cream until thick and fill your piping
bag and pipe cream in a lattice pattern over the top of the
Apricot Sherry Trifle and decorate with the strawberries and
chopped nuts then chill until ready to serve.

CHRISTMAS PUDDING RECIPE
This
recipe will teach you how to make Rich Christmas Pudding.
It is a quick and easy recipe to make.
When we were children we really loved the christmas pudding
as mum used to put money in it. When I make my Rich Christmas
Pudding now I put little things in it that represents money
and then I pay the money to my grandchildren I believe doing
this keeps the family tradition going and besides we all enjoy
the Rich Christmas pudding.
Rich Christmas Pudding Ingredients
60g dates
1/2 tsp salt
250g raisins
3 Tbs brandy
250g currants
250g sultanas
4 eggs beaten
1 cup plain flour
1 tsp mixed spice
250g softened butter
1/2 tsp ground ginger
2 cups fresh breadcrumbs
1/2 tsp bicarbonate of soda
1 cup brown sugar lightly packed
grated rind of a lemon and orange
60g blanched almonds roughly chopped

Christmas Pudding Method
In
a bowl cut up the dates into small pieces and add to bowl
then sprinkle with brandy and cover then leave overnight.
Cream the butter, grated fruit rind and brown sugar until
its light and fluffy then gradually add the beaten eggs beating
well after each addition. Sift together the flour, spice,
ginger, bicarbonate of soda and salt then add the almonds.
Stir into the creamed mixture alternately with soaked fruit
then lastly stir in the breadcrumbs and mix really well. Lightly
grease an 8 cup pudding basin and spoon the mixture into it
and smooth the top.
Cover the basin with the snap on lid and then place it on
an old saucer rounded side up in a large saucepan and fill
the saucepan with boiling water to come halfway up the sides
of the basin and when it returns to the boil cover the saucepan
with a lid. Steam the Rich Christmas Pudding for 3 hours adding
more boiling water as necessary to keep the water halfway
up the basin. Remove basin from water and allow the pudding
to cool then cover basin with foil and store in the refrigerator
until required. On christmas day steam the pudding for a further
hour then turn out onto a heated serving plate and serve the
Rich Christmas Pudding with brandy custard.
