TOMATO FISH WITH CORIANDER RICE RECIPE

Tomato Fish with Coriander Rice.

This recipe will teach you how to make Tomato Fish with Coriander Rice. It is a quick and easy recipe to make. What a wonderful tasty way of doing fish with the flavours of fish fillets, butter, onion, garlic, tomatoes, tomato paste, brown sugar and fresh parsley. Then added to the flavour of the fish mixture is the coriander rice with its flavours of basmati rice, chicken stock cubes, ground coriander and then cooked in the hot water gives the rice a fantastic taste. Add them together on a plate and you have the most magnificent meal that I am Sure anyone would enjoy. My husband likes it when he has been fishing and I make up the Tomato Fish with Coriander Rice out of his wonderful catch of bream.

Tomato Fish with Coriander Rice Ingredients

30g butter
2 tsp brown sugar
425g can tomatoes
2 Tbs tomato paste
1 clove garlic crushed
8 small white fish fillets
1 medium onion chopped
2 Tbs chopped fresh parsley

Coriander Rice:
2 cups hot water
1 cup basmati rice
1 tsp ground coriander
2 chicken stock cubes crumbled

Tomato Fish with Coriander Rice Method

Take your skinless, boneless fish fillets and fold in half and hold with a toothpick. In a large shallow microwave dish combine the butter, onion and garlic then cover and cook on high for 3 minutes. In a blender puree the undrained tomatoes until smooth then strain. Add to the onion mixture the tomato paste, sugar and parsley then add the fish in a single layer then cover and cook on high for about 4 minutes or until fish is tender making sure to baste occasionally with tomato mixture during cooking. Serve the Tomato Fish with Coriander Rice.

Coriander Rice: Combine the rice, water, stock cubes and coriander then cook on high for about 15 minutes or until all the water is absorbed then cover with foil while you are preparing fish to serve up.

TROUT WITH MUSTARD RECIPE

Trout with Mustard.

This recipe will teach you how to make Trout with Mustard. It is a quick and easy recipe to make. There is nothing better than to be able to cook fresh trout up that your husband has been out catching. My husband really enjoys his fishing so I believe it is up to me to cook and prepare it and its all worth it when you see such a pleased look on your husbands face. I really enjoy cooking the Trout with Mustard as the taste is fantastic and cooking it in the microwave it can be ready in just 6 minutes once you have marinated it with the oil, mustard, garlic and lemon juice for 4 hours in the refrigerater. While the fish is marinating I cook some rice up to go with it.

Trout with Mustard Ingredients

4 whole trout
1/3 cup olive oil
2 Tbs lemon juice
1 Tbs french mustard
1 clove garlic crushed
1 Tbs chopped fresh dill

Trout with Mustard Method

In a bowl combine oil, mustard, garlic and lemon juice then brush over each trout and cover then refrigerate for 4 hours or overnight if you want it the next day. Place 2 of the trout in a single layer in a shallow microwave dish then cover and cook on high for about 6 minutes or until trout are tender then carefully remove the skin. To serve the Trout with Mustard spoon liquid over trout and sprinkle it with dill. Cook the remaining trout the same way.
