GROUNDNUT STEW RECIPE

Groundnut Stew.

Groundnut Stew Ingredients

2 Tbs oil
1/2 cup stock
1/2 tsp cayenne
1 eggplant cubed
2 cups tomato juice
2 green bell peppers
2 tomatoes chopped
4 cups chopped onion
3 cloves garlic minced
2 Tbs ground coriander
1 cup chopped zucchini
2 sweet potatoes cubed
3 Tbs fresh ginger root minced

Groundnut Stew Method

Steam or boil sweet potato cubes until tender. Saute garlic, ginger and spices for 1 minute. Add onions and cook until soft. Add tomatoes, eggplant and stock and simmer 10 minutes. Add zucchini and bell pepper continue to simmer until all vegetables are tender 20 minutes. Add sweet potatoes to stew along with tomato juice. Stir the Groundnut Stew well and simmer on very low heat for 10 minutes, stirring to prevent sticking. Serve the Groundnut Stew with rice.

HARVEST POTATO VEGETABLE CASSEROLE RECIPE

Harvest Potato Vegetable Casserole.

This recipe will teach you how to make Harvest Potato Vegetable Casserole. It is a quick and easy recipe to make. Harvest Potato Vegetable Casserole is a great vegetarian recipe to make. The flavours of the potatoes, peppers, tomatoes and herbs makes the taste sensational.

Harvest Potato Vegetable Casserole Ingredients

1 1/4 tsp salt
1/2 tsp pepper
1/4 cup olive oil
4 large cloves garlic minced
1/2 tsp dried oregano leaves
1/4 cup shredded parmesan cheese
1 tsp chopped fresh rosemary leaves

3 yellow peppers cut into 1/2 inch wide slices

4 lbs potatoes peeled cut into 1/8 inch thick slices

1 lb ripe plum tomatoes cut into 1/4 inch thick slices


Harvest Potato Vegetable Casserole Method

Preheat oven to 400 degrees. With oil grease 4 quart shallow baking dish. In dish layer one third of the potatoes, one third of the salt and pepper, half the peppers and tomatoes and half the herbs and garlic and repeat. Top with remaining potatoes, salt and pepper. Drizzle with 1/4 cup oil. Bake 1 hour or until potatoes are tender and top is light brown. Sprinkle the Harvest Potato Vegetable Casserole with cheese and bake 5 minutes. Let sit 10 minutes before serving.
