LEMON
SPONGE CAKE RECIPE
This recipe

flavour and then combine it into a sponge cake and it really
is a delight.

Sponge Cake Ingredients
2 eggs
1 Tbs milk
125g butter
2 Tbs water
2 tsp lemon juice
3 Tbs lemon butter
3/4 cup brown sugar
yellow food colouring
1/4 tsp baking powder
2 cups self raising flour
2 tsp grated lemon rind
1 1/2 cups icing sugar sifted
8 sugared lemon slices for decorating

Sponge Cake Method
Sift the Flour and baking powder
into a large bowl then rub in the butter till the mixture
looks like breadcrumbs, stir in the sugar. Beat in the eggs
one at a time then stir in the lemon rind, milk and lemon
juice. Spoon the mixture into an ungreased base lined 18cm
round by 9cm deep microwave container. Stand on an upturned
plate and microwave for 2 minutes. Turn the container round
and microwave for a further 2 minutes. Turn around again and
microwave for a further 2 minutes. Leave the Lemon Sponge
Cake to stand for 5 minutes before turning it out upside down
onto a serving plate. Cover and leave to cool completely.
Cut the cake into 2 layers. Spread one layer with the lemon
butter and replace the other layer on top. Mix the icing sugar
with the water and yellow colouring. Pour over the top and
decorate with the lemon slices.

FRUIT SPONGE PUDDING RECIPE

This Mixed Fruit Sponge Pudding is a wonderful microwave recipe
to make. This pudding is a fabulous dessert to have on a cold
winters night with hot custard.
Mixed Fruit Sponge Pudding
Ingredients
2 eggs
125g butter
2 Tbs water
60g mixed dried fruit
3/4 cup caster sugar
1 1/2 cups self raising flour

Fruit Sponge Pudding Method
Cream the butter and sugar
together until light and fluffy. Beat in the eggs one at a
time then fold in the flour. Stir in the water and dried fruit.
Place the mixture in a greased 5 cup microwave bowl. Cover
and microwave for 5 minutes. Turn the bowl and microwave for
a further 3 to 5 minutes. Remove the cover and leave the Mixed
Fruit Sponge Pudding to stand for 2 minutes before turning
it out. Serve hot with custard.
