SPINACH
PIE RECIPE
This recipe
will teach you how to make Spinach Pie. It is a quick and
easy recipe to make. This is the most fantastic pie to make
that I am sure all your family will come back for second helpings.
The flavours of the spinach, onion, garlic, lemon rind, parsely,
dill, mint, ricotta cheese and puff pastry is what goes into
making this an exceptional tasting pie.

Pie Ingredients
200g spinach
2 Tbs olive oil
1 clove crushed garlic
1 1/2 cups ricotta cheese
2 tsp finely grated lemon rind
1 brown onion chopped coarsely
2 sheets ready rolled puff pastry
2 Tbs coarsely chopped fresh mint
1/4 cup coarsely chopped fresh dill
1/4 cup coarsely chopped fresh flat leaf parsely

Pie Method
Preheat the oven to very hot.
Steam the spinach until just wilted then drain on some absorbent
paper then squeeze out excess liquid. In a small frying pan
heat the oil and add the onion and garlic and cook until the
onion softens. Combine the spinach, onion mixture, rind, herbs
and cheese in a large bowl and mix well. Oil two oven trays
and place in the oven for about 5 minutes to heat. Place a
sheet of pastry on each tray and divide the spinach mixture
between sheets leaving a 3cm border. Using a metal spatula
fold pastry roughly over the edge of filling. Bake the Spinach
Pie in the very hot oven about 20 minutes or until pastry
browns.
