SPAGHETTI
ALLA CARUSO RECIPE

This recipe
will teach you how to make Spaghetti Alla Caruso. It is a
quick and easy recipe to make. This
pasta recipe is made with chicken livers but please do not
let the livers turn you off because mixed with the other ingredients
makes them taste excellent. Spaghetti Alla Caruso is a wonderful
tasting pasta.
Spaghetti
Alla Caruso Ingredients
2 Tbs olive oil
1 lb spaghetti
1 cup dry red wine
2 Tbs unsalted butter
28 oz can peeled tomatoes
salt and freshly ground black pepper
2 Tbs flat leafed Italian parsley finely chopped
1 cup flour seasoned with a pinch of salt and freshly ground
black pepper
1 lb chicken livers separated into individual lobes and all
visible fat removed
1 lb assorted mushrooms, Shiitake stems removed, Portobello,
White button, sliced thinly

Alla Caruso Method
Heat a frying pan over high
heat and then add the olive oil. Flour the chicken livers
shaking off any excess and add to the pan. Saute until they
are slightly browned and firm then remove livers and set aside.
Pour off the olive oil then add the two tablespoons of butter.
When the butter has foamed and the foam begins to subside
add the mushrooms tossing to coat with the butter. Cook for
4 minutes until the mushrooms begin to give off some of their
juices. Add the wine all at once scraping the bottom of the
pan to loosen any caramelized bits of liver and mushroom from
the bottom. Continue cooking over high heat until the wine
has reduced by about half then lower the heat.
Puree the tomatoes through a food mill or in a food processor
then add to the mushrooms and wine. Adjust the heat so the
mixture barely simmers. Slice the chicken livers crosswise
into half inch rounds and add them with any of their accumulated
juices to the tomato sauce. Taste for seasoning and add salt
and pepper if necessary then cook over low heat for about
thirty minutes or until the extraneous juices have evaporated.
In the meantime bring a large pot with about six quarts of
water to a boil. Add the pasta and cook until tender then
drain the pasta. Divide into four plates top with the sauce
and garnish the Spaghetti Alla Caruso with the chopped parsley.

SPINACH
FETTUCCINE RECIPE
This
recipe will teach you how to make Spinach Fettuccine. It is
a quick and easy recipe to make.
Spinach Fettuccine is an excellent pasta recipe. This recipe
has a great sauce with it to make the taste exceptional.
Spinach Fettuccine Ingredients
1
Tbs honey
1 lb zucchini
4 cloves garlic
1/2 stalk celery
1 lb mushrooms
10 fresh tomatoes
1 small purple onion
1
Tbs virgin olive oil
10 oz spinach fettuccine
1/2 cup mozzarella cheese
Spinach
Fettuccine Method
Saute onions, garlic and celery
in virgin olive oil. Dice tomatoes and add to mixture. Simmer
for l hour and add spices of your choice and honey. Add sliced
zucchini, mushrooms and cheese and simmer just until zucchini
is cooked. Cook fettuccine by placing in 5 quarts of boiling
water for 8 minutes. Drain and top the Spinach Fettuccine
with the sauce.
