QUICK SEAFOOD SOUP RECIPE

This recipe

This is a sensational tasting soup if you like seafood the
mixture of white fish fillets, leeks, canned tomatoes, chicken
stock, tomato puree, oysters, mussels and fresh basil makes
this soup look and taste magnificent. My grand daughter especially
likes making the Quick Seafood Soup when she is having a dinner
party with some of her work friends for the first entree and
after that she likes to serve up a great stir fry and fried
rice. She always says she likes the Quick Seafood Soup as
it really is quick to cook especially when she does not have
much time to prepare a dinner party.
Quick
Seafood Soup Ingredients
30g butter
12 oysters
2 leeks sliced
2 Tbs tomato puree
1 litre chicken stock
1/2 tsp brown sugar
1 Tbs chopped fresh basil
8 cooked mussels in shells
4 white fish fillets skinned and bones removed
440g canned tomatoes undrained and mashed
Quick
Seafood Soup Method
First thing to do is cut the
fish fillets into into pieces and set aside. Melt butter in
a large saucepan then add leeks and cook stirring for 5 minutes
or until leeks are soft then add tomatoes, stock and tomato
puree then bring to the boil. Stir in the fish, oysters, mussels,
basil and sugar and simmer for 5 minutes or until the fish
is cooked then serve the Quick Seafood Soup immediately.

BEEF
AND HERB DUMPLING SOUP RECIPE
This
recipe will teach you how to make Beef and Herb Dumpling Soup.
It is a quick and easy recipe to make.
My dear old aunty taught me how to make the Beef and Herb
Dumpling Soup and it is really a hearty soup that is a meal
in itself. My whole family really enjoy this soup and my grand
children really enjoy the dumplings on top. You certainly
do not need to have any rolls or toast with this soup as the
dumplings are your bread with it.
Beef and Herb Dumpling Soup Ingredients
60g butter
1 Tbs paprika
60g flour sifted
2 onions chopped
2 litres beef stock
4 Tbs tomato puree
1 Tbs caraway seeds
freshly ground black pepper
2 red peppers halved and roasted
750g lean beef cut into thin strips
2 Tbs finely chopped fresh coriander
4 rashers bacon trimmed of fat and chopped
Herb Dumplings:
4 Tbs milk
2 eggs lightly beaten
250g self raising flour sifted
60g butter cut into small pieces
1 Tbs chopped fresh herbs, parsley, coriander, thyme
Beef and
Herb Dumpling Soup Method
In a large heavy based saucepan
melt the butter then add the onions and bacon then cook over
a medium heat for 4 minutes or until the bacon is crisp then
using a slotted spoon remove the bacon and onions from the
pan and set aside. Add the beef to the pan in small batches
then cook over a medium heat to brown all sides then remove
from pan and drain on absorbent kitchen paper. Combine the
paprika and flour then add to the pan and cook over medium
heat for 1 minute and remove pan from heat and gradually blend
in the stock. Return the onion mixture and meat to the pan
and bring it to the boil then turn the heat down and simmer
for 1 1/4 hours or until meat is tender. Take the skin off
the peppers and then chop them up and combine them with the
tomato puree and caraway seeds and put them in the pan and
simmer for 15 minutes longer then season to taste with black
pepper.
Make the dumplings by placing self raising flour in a large
mixing bowl then rub in butter with your fingertips until
the mixture looks like coarse breadcrumbs. In a jug combine
eggs, milk and herbs then pour it into the flour mixture and
mix to a smooth dough. Shape spoonfuls of mixture into small
balls then cook the dumplings in boiling water in a large
saucepan for 12 minutes or until they rise to the top then
remove dumplings with a slotted spoon. To serve the Beef and
Dumpling Soup place a few dumplings in each bowl and cover
with soup and sprinkle with parsley and then serve immediately.
