SALAD
WITH FETTA POLENTA RECIPE
This recipe
will teach you how to make Salad With Fetta Polenta. It is
a quick and easy recipe to make. This is the best tasting
salad and polenta I have ever tasted. The flavours of the
beetroots, pumpkin, spinach and walnuts plus the fetta polenta
and the walnut vinaigarette is what makes the Salad With Fetta
Polenta really exceptional.
Salad
With Fetta Polenta Ingredients
2 cups water
1 cup polenta
2 Tbs olive oil
10 small beetroots
2 cups vegetable stock
150g baby spinach leaves
200g fetta cheese crumbled
75g toasted walnuts chopped coarsely
700g peeled pumpkin diced into 4cm pieces
Walnut Vinaigrette:
60mls olive oil
2 Tbs walnut oil
60mls lemon juice

With Fetta Polenta Method
Make sure to firstly grease
a 20cm x 30cm lamington pan lined with baking paper. Then
preheat the oven to moderately hot. In a large saucepan combine
the water and stock and bring it to the boil and then add
the polenta stirring constantly. Turn the heat down and keep
stirring for 10 minutes or until the polenta thickens. Stir
in the cheese then spread the polenta into the prepared pan
and let cool for 10 minutes then cover and refrigerate for
1 hour or until the polenta is firm. Meanwhile take off the
beetroot stems and leaves then quarter unpeeled beetroots
and place in large shallow baking dish and drizzle with half
of the oil. Roast uncovered in moderately hot oven for 15
minutes.
Add the pumpkin and drizzle with the remaining oil and roast
uncovered in moderately hot oven for about 30 minutes or until
vegetables are tender. Make the walnut vinaigrette by adding
the ingredients to a screw top jar and shaking then set aside.
When the beetroot is cool enough to handle peel the skin off
and place it in a large bowl with dressing and toss gently
to combine. Turn the polenta onto a board and trim the edges
then cut into 12 pieces and cook in batches on a heated oiled
grill plate until brown on both sides and heated through.
Add the pumpkin, spinach and nuts to the beetroot mixture
and toss gently to combine. Divide the polenta pieces among
the serving plates and top with salad.
