RUM TRUFFLES RECIPE
This recipe
will teach you how to make Chocolate Rum Truffles. It is a
quick and easy recipe to make. What a wonderful mixture of
butter, icing sugar, cocoa, rum, coconut, mixed fruit and
vanilla essence goes into the Chocolate Rum Truffles. These
are a wonderful thing to put on the christmas table. I usually
decorate two tables one with appetizers and desserts on it
and another one with the ham, chicken and the main course
on. My family love the way I do the tables and decorate the
room for christmas.
Chocolate
Rum Truffles Ingredients
2 Tbs rum
4 oz butter
1/2 cup cocoa
2 cups coconut
vanilla essence
1 cup icing sugar
2 cups mixed fruit dates, raisins, cherries and ginger

Rum Truffles Method
Beat the butter and icing sugar
to a cream then add the cocoa and a little rum to moisten
blending well. Beat in the remainder of the rum then fold
in the coconut, chopped mixed fruit and the vanilla essence.Take
spoonfuls and roll into balls and place the Chocolate Rum
Truffles on waxed paper then chill well.

CHRISTMAS
CAKE RECIPE
This
recipe will teach you how to make Christmas Cake. It is a
quick and easy recipe to make. I
prefer my Christmas Cake without icing and I find this cake
is sweet and rich enough without the icing. But some of my
family have real sweet toothes so I usually make up two cakes
and put icing on one and I have to admit I never have any
of the Christmas Cake left after christmas.
Christmas Cake Ingredients
4 eggs
pinch of salt
1/2 lb butter
2 oz cherries
4 Tbs brandy
1/4 lb currants
1/2 lb sultanas
1/2 tsp nutmeg
10 oz plain flour
1/4 lb mixed peel
1/4 lb white sugar
1/4 lb brown sugar
1/2 tsp mixed spice
1/2 lb seeded raisins
1/2 tsp baking powder
1/4 lb blanched almonds chopped

Cake Method
Line an 8 inch cake tin with
two thicknesses of brown and white paper. Prepare the fruit
the day before the cake is to be made. Blanch and chop the
almonds and chop the cherries up then chop the mixed peels
and raisins if they are large. Sprinkle with half the brandy
and leave to stand overnight. Beat the butter and sugar to
a soft cream and add the eggs one at a time beating well after
each addition. Add half the nuts and fruit and then the remainder
of the brandy. Sift the flour with the salt, baking powder
and spices and add half to the creamed mixture. When well
blended add the remainder of the flour and the fruit then
place in the prepared tin. With an electric oven preheat the
oven to 325 degrees then place the cake in the centre of the
oven and immediately reduce the heat to 275 degrees. Bake
for 3 to 3 1/2 hours. If using a gas oven preheat the oven
to 275 degrees and place the cake in the centre of the lower
half of the oven and bake the Christmas Cake at 275 degrees
for 3 to 3 1/2 hours.
