RUM BALLS RECIPE

Rum Balls.

This recipe will teach you how to make Rum Balls. It is a quick and easy recipe to make. These Rum Balls are great sweets to make for christmas with the flavours of raisins, cherries, almonds, orange cake, coconut, sultanas, ginger, almond essence, rum,copha and rolled in chocolate shot makes the Rum Balls absolutely exquisit.

Rum Balls Ingredients

3 Tbs rum
1/2 cup sugar
2 Tbs coconut
1/2 cup raisins
chocolate shot
1/2 cup sultanas
3/4 lb orange cake
1 tsp almond essence
1/4 cup melted copha
1/4 cup glace cherries
1/2 cup blanched almonds
1 Tbs chopped crystallized ginger

Rum Balls Method

Finely chop the raisins, cherries and the almonds and crumble the cake. Combine the cake crumbs with the coconut, cocoa and castor sugar and add the sultanas, raisins, ginger, cherries and almonds. Mix the almond essence, rum and melted copha together and stir into the dry ingredients blending well. Form into balls about 1 inch in diameter and roll in the chocolate shot. Chill the Rum Balls overnight in the refrigerator.

ICED CHRISTMAS PUDDING RECIPE

Iced Christmas Pudding.

This recipe will teach you how to make Iced Christmas Pudding. It is a quick and easy recipe to make. This great pudding is bursting with fruits, nuts, glazed fruits and brandy but is real creamy and cool to suit our climate. My family always enjoys the Iced Christmas Pudding especially with cold custard over the top.

Iced Christmas Pudding Ingredients

1/2 cup cream
1/4 cup brandy
1/4 cup chocolate bits
1/2 cup toasted flaked almonds
1 litre vanilla ice cream softened
1/4 cup chopped glazed pineapple
1/2 cup each sultanas,currants and chopped raisins
1/4 cup each chopped glazed cherries and mixed peel

Iced Christmas Pudding Method

In a bowl mix the fruits with brandy and cover with plastic wrap and leave overnight. Place the softened ice cream and cream in a very large bowl and stir in the fruits, almonds and chocolate bits then spoon into a 7 cup pudding basin and cover with freeze wrap then freese until required. Serve the Iced Christmas Pudding with cold custard.
