PUMPKIN
FRITTATA RECIPE
This recipe
will teach you how to make Pumpkin Frittata. It is a quick
and easy recipe to make. I really love my Pumpkin Frittata
and my children really enjoy it to even though its full of
vegetables. The flavours of the eggs, pumpkin, potato, spinach,
onion, fetta cheese and cheddar cheese makes this recipe taste
exceptional.

Frittata Ingredients
8 eggs beaten lightly
1 red onion sliced thinly
4 cups chopped pumpkin
1 potato chopped coarsley
200g fetta cheese crumbled
3/4 cup coarsley grated cheddar cheese
125g baby spinach leaves chopped coarsley

Frittata Method
First thing to do is preheat
the oven to very hot and then grease a deep 23cm square cake
pan and line the base and two opposite sides with baking paper.
Put the pumpkin in a large microwave safe bowl and cover and
cook on high making sure to stir it half way through cooking
time about 5 minutes or until tender. Put the potato in a
microwave safe bowl and do the same thing with it. In a large
bowl combine the pumpkin, potato, spinach, cheeses and eggs
and stir to combine. Put this mixture into prepared pan and
top with the onion. Bake the Pumpkin Frittata in a very hot
oven about 25 minutes or until firm then let it stand for
5 minutes before serving.
