PUMPKIN
MACARONI RECIPE
This recipe
will teach you how to make Pumpkin Macaroni. It is a quick
and easy recipe to make. One of my favourite vegetables is
pumpkin thats why I really like making the Pumpkin Macaroni.
The flavours of the chicken stock, butternut pumpkin, garlic,
macaroni, parmesan cheese, basil, salt and pepper makes the
Pumpkin Macaroni taste absolutely sensational.

Macaroni Ingredients
4 cups chicken stock
1/2 cup basil shredded
salt and pepper to taste
2 cloves chopped garlic
200g dried large macaroni
30g parmesan cheese grated
500g butternut pumpkin, peeled and cut into 2cm cubes

Macaroni Method
In a large saucepan bring the
chicken stock to the boil and add the pumpkin and garlic then
cover and cook over medium heat for 15 minutes making sure
to skim off any scum that comes to the surface. Add the macaroni
and cook for a further 15 minutes until the pasta is tender.
Make sure you stir regularly to stop the mixture from sticking
to the bottom of the pan. Drain the pasta and add the parmesan
cheese and basil then stir well and season to taste. Serve
the Pumpkin Macaroni in warm pasta bowls with a big green
salad.

BEANS IN TOMATO SAUCE RECIPE
This
recipe will teach you how to make Green Beans in Tomato Sauce.
It is a quick and easy recipe to make.
When a lot of people think of vegetables they
just think of doing them the same way either boiled, baked
or steamed but I like to experiment and make them different
thats why I am sure you will like the Green Beans in Tomato
Sauce.
Green Beans in Tomato Sauce Ingredients
1 Tbs olive oil
1 tsp brown sugar
120g
fetta crumbled
1/2
tsp cumin seeds
1
onion finely chopped
1
Tbs red wine vinegar
60g
green beans trimmed
3
cloves garlic finely chopped
1
carrot peeled and finely diced
500g
tomatoes peeled and chopped

Beans in Tomato Sauce Method
In
a non stick frying pan heat the oil and add the onion and
carrot then cook until the onion is soft and golden. Add the
garlic and cummin seeds and cook for another minute then add
the tomato, beans, sugar and vinegar. Allow the mixture to
bubble then reduce the heat and cover and simmer for 15 minutes.
Add a little water if necessary. Sprinkle the Green Beans
in Tomato Sauce with the crumbled fetta and serve with rice.
