LITTLE
MINCE PIES RECIPE
This recipe
will teach you how to make Little Mince Pies. It is a quick
and easy recipe to make. These Little Mince Pies have been
made every christmas in our family as long as I can remember
and everyone has enjoyed eating them to. There is nothing
better than having home cooked Little Mince Pies. Christmas
is not complete without them and you can make them ahead as
they freeze really well and that leaves you more time for
all the other christmas cooking. My mother use to make a lot
of the Little Mince Pies up and decorate little boxes and
fill them with the Little Mince Pies and give to our neighbors
for christmas.
Little
Mince Pies Ingredients
Fruit
Mince:
1/3 cup brandy
125g mixed peel
1 tsp mixed spice
1/2 cup brown sugar
250g suet finely grated
90g almonds finely chopped
1 cup drained crushed pineapple
juice and grated rind of 2 lemons
juice and grated rind of 1 large orange
1 large granny smith apple peeled and grated
125g each currants, sultanas and chopped raisins
Pastry:
60g egg
125g butter
1 cup plain flour
1/2 cup castor sugar
1 cup self raising flour
1 egg white lightly beaten
sifted icing sugar to garnish
Little
Mince Pies Method
Combine
all the ingredients for the fruit mince and spoon into jars
with well fitting lids and store in the refrigerator for at
least a week before using as the flavour of the fruit mince
develops and grows richer with time. For the pastry cream
the butter and sugar then add egg and beat in, add sifted
flours and fold in. Knead lightly and then wrap in plastic
wrap and chill for 1 hour. Roll out onto a floured surface
and cut out 8cm rounds with a floured cutter.
Fit rounds into well greased tartlet cases and spoon the fruit
mince into cases. From the remaining pastry cut lids into
star shapes with a biscuit cutter and put on top of pies.
Brush lids with egg white and bake Little Mince Pies in a
moderate oven 180 degrees for 25 minutes or until pastry is
golden. Cool in the tins for a minute before removing to wire
racks. Serve the Little Mince Pies warm dusted with sifted
icing sugar. If baking ahead and freezing allow pies to thaw
at room temperature then heat for 3 to 4 minutes in a moderate
oven.

CHRISTMAS
TREE COOKIES RECIPE
This
recipe will teach you how to make Christmas Tree Cookies.
It is a quick and easy recipe to make.
Crisp sugar and spice cookies are really delicious and also
make good decorations for the christmas tree. I have a little
table christmas tree that I decorate with these Christmas
Tree Cookies each Year and put on the centre of the sweets
table. My children and especially the grandchildren really
enjoy taking their cookies of the tree. You can decorate the
Christmas Tree Cookies by putting a cherry, sultana, raisins
or almond in the centre of the cookies.
Christmas Tree Cookies Ingredients
1/4 tsp salt
2 tsp cinnamon
1 tsp mixed spice
3 cups plain flour
1 tsp ground ginger
2 tsp baking powder
250g softened butter
1 egg white lightly beaten
3 Tbs orange juice or brandy
1 1/2 cups lightly packed brown sugar
sultanas, raisins, almonds or cherries to decorate

Tree Cookies Method
Sift
together the flour, baking powder, cinnamon, spice, ginger
and salt then set aside. With an electric mixer cream the
butter and gradually beat in the sugar. Add the brandy or
orange juice and the dry ingredients then stir until the mixture
is well combined and forms a soft dough. Wrap in plastic wrap
and chill for 30 minutes. Turn out dough onto a floured surface
and roll out with a floured rolling pin to make a rectangle
about 5mm thick. Cut dough into shapes using biscuit cutters
bells, stars, hearts and gingerbread men.
Arrange cookies on a lightly greased baking trays and brush
with egg white. Use a metal skewer to mark patterns on each
cookie and decorate with the raisins, cherries, sultanas and
almonds. Make a hole in the top of each cookie for threading
the ribbon through it to hang on tree. Bake the Christmas
Tree Cookies in a moderate oven 180 degrees for 15 minutes
or until firm to the touch. Lift the cookies onto a wire rack
to cool. When the Christmas Tree Cookies have cooled store
them in airtight tins then when ready to decorate the tree
thread ribbon through the holes in the cookies and tie to
the branches.
