MEATLESS MEATLOAF RECIPE

Meatless Meatloaf.

This recipe will teach you how to make Meatless Meatloaf. It is a quick and easy recipe to make. This Meatless Meatloaf is a great vegetarian recipe. I cooked this recipe up and had some friends around for a meal and they thoroughly enjoyed it, then I informed them it wasn't meat. The flavour is great. Serve hot with vegetables or cold with salad.

Meatless Meatloaf Ingredients

1 tsp salt
2 potatoes
1 cup pecans
2 well beaten eggs
1 cup onions chopped
1 cup dry bread crumbs

Meatless Meatloaf Method

Preheat oven to 350 degrees. Put potatoes, onions, nuts and breadcrumbs through a food processor so it is all ground up like meatloaf. Mix these ingredients well then add the rest of the ingredients. Put the Meatless Meatloaf in well greased loaf pan and bake the Meatless Meatloaf for 1 hour or until firm. Stays firm when cold. Serve the Meatless Meatloaf with roast potatoes, peas and gravy or have it cold on sandwiches or with salad.

MEXICAN POT PIE RECIPE

Mexican Pot Pie.

This recipe will teach you how to make Mexican Pot Pie. It is a quick and easy recipe to make. Mexican Pot Pie is a great vegetarian recipe. This is a pie that has a cornmeal topping and the flavours of the vegetables with the topping is a great taste.

Mexican Pot Pie Ingredients

2 tsp oil
1 2/3 cup water
1 tsp chili powder
2 cups corn kernels
1 cup tomato puree
1/4 cup chopped onion
2/3 cup yellow cornmeal
1 tsp bragg liquid aminos
2 cups cooked pinto beans
1 1/4 cup chopped bell pepper


Mexican Pot Pie Method

Preheat oven to 350 degrees. Saute bell pepper and onion in oil until tender. Stir in beans, tomato puree, corn and chili powder. Cover and cook over low heat for 15 minutes. Pour into 8 x 8 inch baking pan and set aside. In a separate saucepan mix together cornmeal, water and bragg's. Cook over low heat stirring constantly until very thick about 5 minutes. Spread cornmeal mush over bean mixture to form a crust. Sprinkle chili powder over top of crust. Bake the Mexican Pot Pie for 30 minutes or until crust is bubbly around the edges.
