HERB GNOCCHI RECIPE
This recipe
will teach you how to make Herb Gnocchi. It is a quick and
easy recipe to make.
A lot of people do not even know what knocchi are but let
me tell you just try this Herb Knocchi and I am sure you will
keep wanting to make more. My family all like cooking there
own Herb Knocchi as they like it when they float to the top
and then to add cheese over them just makes the taste exceptional.
Herb
Gnocchi Ingredients
coarse salt
1/4 lb sorrel
2 Tbs butter
1/2 lb spinach
2 eggs beaten
1 Tbs chopped dill
1 1/2 cups parsley
1 Tbs chopped chervil
2/3 cup ricotta cheese
1 Tbs chopped tarragon
1 bunch American cress
freshly ground black pepper
3 Tbs all purpose flour sifted
3/4 cup freshly grated parmesan cheese
Herb Gnocchi
Method
Wash and drain the spinach,
sorrel, watercress and parsley. Place in a large pan of boiling
water and boil for 4 minutes and drain. When cool enough to
handle press out as much moisture as possible and chop finely.
Add the remaining herbs and place in a saucepan over low heat
for several minutes stirring to dry out. Beat the ricotta
cheese to a smooth consistency and add to the puree with the
butter, 1/4 cup of the parmesan cheese, salt and pepper to
taste. Take the pan off the heat and stir in the eggs and
flour. Beat until smooth. Pour into a cool shallow dish and
leave in the refrigerator overnight.
Bring a large pan of lightly salted water to a boil. Form
the green mixture into egg shaped gnocchi and roll them very
lightly on a floured board. Drop them in batches in the pan,
but do not crowd them. When the Herb Gnocchi float to the
surface after 4 to 5 minutes lift the Herb Gnocchi out with
a slotted spoon and drain. Test one of the Herb Gnocchi to
make sure they are cooked through then transfer to a warmed
serving dish. Sprinkle the Herb Gnocchi with a little parmesan
cheese. Serve the remaining cheese separately.Serve the Herb
Gnocchi with melted butter if you like.

POTATO CASSEROLE RECIPE
This
recipe will teach you how to make Hot Potato Casserole. It
is a quick and easy recipe to make.
Hot Potato Casserole is a different way of doing potato casserole
as you use mashed potatoes and it tastes absolutely great.
Hot Potato Casserole Ingredients
paprika
1 onion
2 Tbs milk
60g butter
750g potatoes
salt and pepper
1/3 cup sour cream

Casserole Method
Peel and chop potatoes then
cook in boiling salted water until tender and drain. Mash
potatoes well. Melt butter in pan and add peeled and chopped
onion cook until transparent. Add to potato with sour cream
and milk then mix until smooth and season with salt and pepper.
Spoon potato mixture into ovenproof dish and sprinkle with
paprika. Bake the Hot Potato Casserole in a moderate oven
350 degrees for about 15 minutes. Serve the Hot Potato Casserole
with green beans, pumpkin and cabbage or have it with a tossed
salad.
