FRUITED RICE SALAD RECIPE

This recipe
will teach you how to make Fruited Rice Salad. It is a quick
and easy recipe to make.
I like any meal that
has rice in it as I am a real lover of rice and this Fruited
Rice Salad is one of my best rice recipes I believe. The flavours
of the rice, raisins, apricots, pecans and avocado and then
tossed in the vinaigrette makes the Fruited Rice Salad taste
just exquisit.
Fruited
Rice Salad Ingredients
2 avocados
1/4 cup raisins
1/2 cup chopped pecans
1/2 cup chopped dried apricots
4 cups cooked brown or wild rice
Vinaigrette:
1 tsp honey
1 Tbs lemon juice
1 Tbs red wine vinegar
salt and pepper to taste
1/4 tsp ground coriander
1/4 tsp dijon style mustard
1/4 cup safflower or vegetable oil
Shake all ingredients together in tightly covered container

Rice Salad Method
Chill rice. Pour boiling water
over raisins and apricots in small bowl and let stand 10 minutes
then drain and cool. Heat oven to 350 degrees. Place pecans
on shallow baking pan bake 5 to 8 minutes. Remove from oven
and set aside. Prepare vinaigrette. Toss rice, raisins, apricots,
and pecans with vinaigrette. Refrigerate the Fruited Rice
Salad 1 hour. Just before serving the Fruited Rice Salad halve,
seed and take out the centre of the avocados leaving just
the skin. Dice the avocado and add to the Fruited Rice Salad.
Fill each half of avocado with the Fruited Rice Salad and
serve.

STUFFED MUSHROOMS RECIPE
This
recipe will teach you how to make Garden Stuffed Mushrooms.
It is a quick and easy recipe to make.
Mushrooms are known as a vegetarians meat and this recipe
for Garden Stuffed Mushrooms is one I make up when I have
friends visit who don't eat meat.
Garden Stuffed Mushrooms Ingredients
pinch of pepper
2 Tbs finely chopped onion
1/2 cup stuffing mix crushed
1/4 cup finely chopped carrot
1/4 cup butter or margarine melted
1/4 cup finely chopped green pepper
16 mushrooms about 2 inch, stems removed
Garden
Stuffed Mushrooms Method
Heat oven to 350 degrees. In
small bowl mix all the ingredients together except mushrooms.
Fill each mushroom cap with 1 tablespoon filling. Place the
Garden Stuffed Mushrooms in a buttered 13 x 9 inch baking
pan. Bake the Garden Stuffed Mushrooms for 20 to 25 minutes
or until tender.
