EGG AND MUSHROOM STROGANOFF RECIPE

Egg and Mushroom Stroganoff.

This recipe will teach you how to make Egg and Mushroom Stroganoff. It is a quick and easy recipe to make. This is a wonderful vegetarian stroganoff to cook and very nutricious to eat. Lovely to relax with a good meal of Egg and Mushroom Stroganoff herbed bread and a glass of sparkling apple juice this is a good evening meal to me at the end of a busy working day.

Egg and Mushroom Stroganoff Ingredients

4 eggs
salt and pepper
1 Tbs melted butter
1/2 cup long grain rice
225g carton sour cream
2 cups sliced mushrooms
parsley chopped for garnish
2 small onions finely chopped

Egg and Mushroom Stroganoff Method

Boil the eggs till hard. Cook the rice in boiling salted water until tender then drain well and place on a serving plate. Arrange the eggs on top and keep warm. In a frying pan melt the butter, then fry the onions and mushrooms until tender then stir in the sour cream. Mix well then pour the mixture on top of the eggs. Sprinkle the Egg and Mushroom Stroganoff with parsley and serve immediately.

FRIED OKRA RECIPE

Fried Okra.

This recipe will teach you how to make Fried Okra. It is a quick and easy recipe to make. When cut okra releases a sticky substance with thickening properties useful for soups and stews. Many people prefer breaded and Fried Okra because the slippery substance is less pronounced. The taste of the Fried Okra is magnificent.

Fried Okra Ingredients

1 lb fresh okra
1/2 cup self raising flour
1 cup self raising cornmeal
1 cup vegetable oil for frying


Fried Okra Method

Wash the okra in cold water and dry with paper towels. Remove the tops and stems and cut the pods into 1/2 inch long pieces. Mix the cornmeal, flour and salt together in a mixing bowl and add the okra. Stir the okra and cornmeal mixture together making sure to completely coat the okra pieces on all sides and then let it stand for a few minutes and then stir again. Once the okra is completely coated shake the bowl to allow the left over breading to settle to the bottom. Heat the vegetable oil over medium high heat in a large frying pan. Place the breaded okra into the pan fry until browned on all sides. Remove the Fried Okra from the pan and drain on paper towels before serving.
