No Crust Zucchini Pie.

No Crust Zucchini Pie Ingredients

4 eggs
1/2 cup milk
1 cup bisquick
1 cup vegetable oil
1/2 cup grated parmesan cheese
3/4 cup shredded mozzarella cheese
3 cups shredded or thin sliced zucchini

No Crust Zucchini Pie Method

Combine the eggs, milk and vegetable oil and beat well. Add the zucchini and mix in evenly by hand. Fold in the shredded mozzarella and parmesan cheese. Mix the bisquick in by hand and pour into a floured pie pan. Bake the No Crust Zucchini Pie at 350 degrees for 30 to 45 minutes until done. Great served with salad.

NUT AND VEGETABLE LOAF RECIPE

Nut and Vegetable Loaf.

This recipe will teach you how to make Nut and Vegetable Loaf. It is a quick and easy recipe to make. This Nut and Vegetable Loaf is a very good vegetarian recipe. The texture and taste is excellent. And you can have it hot with vegetables or it goes really well cold with salad.

Nut and Vegetable Loaf Ingredients

salt
2 eggs
2 Tbs butter
1 Tbs tomato paste
1 small onion chopped
1 Tbs chopped parsley
1 stalk celery chopped
1 small carrot chopped
2 cups finely chopped nuts
freshly ground black pepper

1 cup skinned and chopped tomatoes


Nut and Vegetable Loaf Method

Melt the butter in a pan add the onion, carrot and celery and cook until softened. Add the tomato paste and tomatoes and cook for 5 minutes. Put the eggs, parsley, salt and pepper to taste in a bowl and beat well. Stir in the nuts and vetetables. Transfer the Nut and Vegetable Loaf to a greased 3 3/4 cup ovenproof dish then place the Nut and Vegetable Loaf in preheated hot oven 425 degrees and bake for 30 to 35 minutes. Turn the Nut and Vegetable Loaf out and garnish with onion rings, parsley and cucumber slices. Serve the Nut and Vegetable Loaf hot with vegetables and sauce or cold with salad.
