CRISPY
FILLED BISCUITS RECIPE
This recipe
will teach you how to make Crispy Filled Biscuits. It is a
quick and easy recipe to make. The flavour of these great
crunchy biscuits are wonderful but then they are even better
filled with the cream that has the flavour of raisins and
lemon juice mixed with the other ingredients and spread between
the crispy biscuits makes the taste really sensational. then
I make them a bit more special by putting sliced strawberries
on top.

Filled Biscuits Ingredients
For The Biscuits:
pinch salt
4oz butter
1/4 cup water
3 oz brown sugar
1 tsp baking powder
1 3/4 cups plain flour
1 tsp vanilla essence
1 cup cornflakes, crushed
For The Filling:
pinch salt
1/4 cup water
1 dsp cornflour
1 1/2 Tbs sugar
1 dsp lemon juice
1/2 cup chopped raisins

Filled Biscuits Method
In a saucepan combine all the
ingredients for the filling and stir over low heat until thick.
Turn into a bowl and let cool. To make the biscuits first
add the flour, baking powder and salt together then beat the
butter and sugar together to a soft cream and add the water
and vanilla alternately with the flour and mix well then stir
in the cornflakes and chill the dough until firm. Knead only
till smooth on outside and roll out 1/8 inch thick and cut
into 2 inch rounds. Place half the rounds on a greased biscuit
tray and place a teaspoonful of the cooled filling on each.
Top with the other half of biscuit rounds pressing them on
lightly. Bake the Crispy Filled Biscuits at 400 degrees for
15 minutes then let the biscuits cool.
