CREAMED MUSHROOMS RECIPE

This recipe
will teach you how to make Creamed Mushrooms. It is a quick
and easy recipe to make.
This is one of my favourite
recipes and you do not have to be a vegetarian to like this
sort of food. I like to oven bake large potatoes and have
the Creamed Mushrooms over the top. My children really like
it when I cook the Creamed Mushrooms and do them with potato
and salad. It is so quick and easy to do that I mainly cook
the creamed mushrooms for a meal on the week end.
Creamed
Mushrooms Ingredients
1 Tbs salad oil
salt and pepper
juice of 1 lemon
450g mushrooms
142ml soured cream
parsley for garnishing
1 onion peeled and quartered
Creamed
Mushrooms Method
Put the onion in a blender and
puree then add oil to a large frying pan and lightly saute
the onion. If necessary peel and trim mushrooms slice finely.
Add mushrooms to the onion and sprinkle with seasoning and
lemon juice. Cover the Creamed Mushrooms and cook gently about
6 minutes. Lightly stir in soured cream. Adjust seasoning
to taste. Cook the Creamed Mushrooms for 2 minutes more. Serve
garnished with sprigs of parsley. The Creamed Mushrooms can
be served hot or cold with salad.

CRISP
FRIED TOFU AND GREENS RECIPE
This
recipe will teach you how to make Crisp Fried Tofu and Greens.
It is a quick and easy recipe to make.
A lot of people do not know what to do with tofu and if you
eat it just as it is it can be a bit bland so I am going to
share a recipe with you that has great taste and flavour.
Tofu taste really great cooked the right way.
Crisp Fried Tofu and Greens Ingredients
1 tsp cornstarch
1/2 cup cornstarch
1/2 cup water or vegetable stock
2 cakes of tofu frozen overnight and thawed
Marinade:
dash cayenne
1/3 cup soy sauce
1/4 cup rice vinegar
2 cloves garlic minced
1 Tbs finely grated ginger root
Sauce:
3 Tbs soy sauce
2 tsp rice vinegar
1/4 cup dry sherry
2 tsp honey or brown sugar
Vegetables:
3 Tbs oil
3 cloves garlic minced
1 cup thinly sliced onion
6 cups mix of coarsely chopped bok choy, chard, kale, nappa
cabbage
Crisp Fried
Tofu and Greens Method
Gently squeeze as much liquid
out of thawed tofu as possible. Cut tofu crosswise into 1/2
inch thick slices then diagonally to make 4 triangles. Combine
marinade ingredients and mix well. Arrange tofu triangles
in one layer in a dish and cover with marinade. Allow to sit
for at least 10 minutes to absorb the flavours. Prepare sauce
mix by combining all ingredients in a small bowl. In a separate
bowl mix the water or stock and the 1 teaspoon cornstarch.
Soak marinated tofu pieces in cornstarch and fry over medium
heat in 1/8 to 1/4 inch of oil for 3 to 4 minutes on each
side. Drain and keep warm in 200 degree oven. Add leftover
marinade to sauce mix. Heat 3 tablespoons oil in a wok and
stir fry garlic and onion until onion is tender. Add greens
and continue stir frying until just wilted but not mushy.
Add sauce mix and cornstarch mix and stir fry just until sauce
is thickened. Add reserved fried tofu. Serve the Crisp Fried
Tofu and Greens with rice.
