LEEK
AND CORN SOUP RECIPE
This recipe

you up. I always make extra so I can freeze some and have
it another time as the Leek and Corn Soup would be alright
frozen up to 2 months. What I like about having some frozen
is that you can use it on nights that you have been busy and
have not had time to cook a meal all you have to do is get
the Leek and Corn Soup out and heat up with hot buttered toast.
Leek and
Corn Soup Ingredients
60g butter
1 Tbs plain flour
3 cups hot water
2 Tbs sour cream
440g can creamed corn
2 medium leeks thinly sliced
2 small chicken stock cubes crumbled
Leek and
Corn Soup Method
In a large microwave bowl combine
leeks and butter then cover and cook on high for 5 minutes
then add flour and stir until smooth. Stir in water, stock
cubes and corn then cover again and cook on high for 5 minutes
more. Blend the mixture in batches until smooth. Reheat the
Leek and Corn Soup before serving and top with sour cream.

AND LEEK SOUP RECIPE

recipe will teach you how to make Cauliflower and Leek Soup.
It is a quick and easy recipe to make.
I really like this soup with croutons on top. The Cauliflower
and Leek Soup is one of my daughters favourite soups and she
really likes a lot of croutons with it so I make sure I have
a lot of Cauliflower and Leek Soup made up and a big container
of croutons when I know she is coming home for a soup night.
Cauliflower and Leek Soup
Ingredients
30g butter
2 1/2 cups milk
1/2 small cauliflower
1 medium leek thinly sliced
2 Tbs chopped fresh parsley
2 Tbs grated parmesan cheese
Cauliflower
and Leek Soup Method
The first thing you must do
is to prepare the cauliflower by cutting it into flowerets
then rince well under water but do not dry. Place the cauliflower
in a single layer in a dish then cover and cook on high for
about 8 minutes or until tender then drain. In a small bowl
combine butter and leek then cook on high for about 5 minutes
or until leek is tender. Blend the cauliflower, leek mixture
and milk in several batches until smooth then transfer to
a large microwave bowl then stir in the cheese and parsley
and cook on high for about 4 minutes or until the Cauliflower
and Leek Soup is heated through.
