COCONUT
ROUGHS RECIPE
This recipe
will teach you how to make Coconut Roughs. It is a quick and
easy recipe to make. The Coconut Roughs are a great thing
to make to go on the table with lollies for christmas day.
I also like making them when I am doing some christmas treats
up for my friends for christmas. And my husband has a sweet
tooth and really loves them.

Roughs Ingredients
1 cup coconut
1/2 cup cocoa
125g copha melted
1/4 cup coconut extra
3/4 cup icing sugar sifted
1/3 cup dried milk powder

Roughs Method
Place the coconut, cocoa, dried
milk powder and icing sugar in a bowl and mix well. Pour over
the cooled copha and blend well. Place spoonfuls on a tray
and sprinkle the Coconut Roughs with coconut and refrigerate.

CHRISTMAS FRUIT CAKE RECIPE
This
recipe will teach you how to make Dark Christmas Fruit Cake.
It is a quick and easy recipe to make. This
is a great Dark Christmas Fruit Cake. There are so many ways
to do a christmas cake and they all taste different, but this
one is a lovely moist dark cake.
Dark Christmas Fruit Cake Ingredients
6 eggs
1/2 lb butter
1 tsp nutmeg
3 cups raisins
1 cup currants
1/4 cup brandy
2 cups sultanas
1 1/2 tsp cinnamon
1 cup peel chopped
1/4 cup orange juice
2 1/2 cups plain flour
1 cup cherries halved
1/2 tsp ground cloves
1/2 tsp baking powder
1 1/3 cup brown sugar
1 oz chocolate melted
1 cup blanched almonds
1 cup diced candied pineapple

Christmas Fruit Cake Method
Combine the currants, raisins,
peel, sultanas, cherries, pineapple and halved almonds in
a large bowl with 1 cup of the flour until the fruit is well
coated. Sift the remaining flour with the nutmeg, cinnamon,
cloves, and baking powder. Beat the butter with the sugar
until creamy then add the eggs one at a time beating well
after each addition then add the melted chocolate. Stir in
the flour alternately with the brandy and fruit juice and
mix until smooth then stir in the fruit mixture. Turn into
a 10 inch cake tin which has been lined with two thicknesses
of brown and white paper and bake the Dark Christmas Fruit
Cake in a slow oven at 275 degrees for 3 1/2 to 4 hours.
