CHRISTMAS
CONFECTION CAKE RECIPE
This recipe
will teach you how to make Christmas Confection Cake. It is
a quick and easy recipe to make. This is a cake you do not
have to have icing on. The Christmas Confection Cake has a
wonderful combination of brazil nuts, walnuts, dates, candied
peel, red cherries, green cherries and raisins which goes
into making this cake an absolutely fantastic tasting cake.
I love having the Christmas Confection Cake made for when
friends come over for a cuppa on christmas day.

Confection Cake Ingredients
3 eggs
1/2 tsp salt
1/2 lb dates
3/4 cup sugar
1/2 cup raisins
3/4 cup plain flour
1 tsp vanilla essence
1/2 tsp baking powder
1 1/2 cups walnut halves
2/3 cup candied peel chopped
1/2 cup red maraschino cherries
1/2 cup green maraschino cherries
1 1/2 cups shelled whole brazil nuts

Confection Cake Method
Grease the bottom and sides
of an 8 x 5 inch orange loaf tin and line with one layer of
greased paper. Combine the whole brazil nuts in a large bowl
with the walnut halves, dates, chopped peel and well drained
cherries and raisins. Sift the flour with the baking powder
and salt and mix with the sugar. Add to the nuts and fruit
mixing thoroughly. Add the vanilla to the beaten eggs and
then stir in, it will be fairly stiff. Spoon the mixture into
the prepared tin levelling it with the back of a wooden spoon.
Bake in a slow oven 300 degrees for 2 to 2 1/2 hours. Leave
in the tin to cool for about 10 minutes then loosen round
the edge and turn out onto a cake cooler. When cold wrap in
plastic and store in refrigerator. Do not decorate this Christmas
Confection Cake.

This
recipe will teach you how to make Christmas Treats. It is
a quick and easy recipe to make. These
are wonderful Chrismas Treats to make. I sometimes cook a
few batches of these Christmas Treats and put them in decorated
boxes for the children to give to there friends.
And I make sure we have plenty of the Cristmas Treats on our
table to.
Christmas Treats Ingredients
125g margarine
1 Tbs golden syrup
400g condensed milk
1 2/3 cups brown sugar

Treats Method
Melt the margarine in a saucepan
then add the remaining ingredients and mix well. Cook stirring
constantly until the mixture is dark brown and leaves the
side of the pan. Spray tin and pour in the mixture. Mark into
squares allow to cool and cut into squares. Store in an air
tight container.
