CHICKPEA
ENCHILADAS RECIPE
This recipe
will teach you how to make Chickpea Enchiladas. It is a quick
and easy recipe to make. I love having these Chickpea Enchiladas
on a friday night in front of the television as an easy meal
after working all week. The flavours of the onion, tomato,
chickpeas, avocado, cheese, lettuce and the rest of the ingredients
wrapped in corn tortillas makes these Chickpea Enchiladas
taste really exceptional.
Chickpea
Enchiladas Ingredients
1 Tbs olive oil
8 corn tortillas
1 tsp ground cumin
1 tsp sweet paprika
1 clove crushed garlic
400g can tomato puree
1/2 tsp ground chili powder
1 tomato chopped coarsely
1 avocado chopped coarsely
1 red onion chopped coarsely
1 white onion chopped coarsely
1/2 cup shredded iceberg lettuce
300g can chickpeas drained and rinsed
1 Tbs coarsely chopped fresh coriander
1/2 cup cheddar cheese coarsely grated

Enchiladas Method
In a medium saucepan heat the
oil and cook the onion and garlic stirring unyil the onion
softens. Add spices and cook stirring for 2 minutes then add
puree and bring it to the boil then reduce heat and simmer
stirring occasionally for 5 minutes. Add the chickpeas and
coriander and cook stirring until hot. Soften tortillas in
microwave oven on high for 30 seconds. Divide chickpea mixture
and remaining ingredients among tortillas then fold the Chickpea
Enchiladas to enclose the filling.
