CHICKEN
WITH PILAF RECIPE
This recipe
will teach you how to make Chicken with Pilaf. It is a quick
and easy recipe to make. This recipe is a wonderful tasting
meal to have. To make the pilaf special add some coriander
and raisins. The taste of the chicken is fantastic to after
you marinate it in the juice, garlic and spices for 3 hours.
All your family will enjoy this recipe try it at your next
barbecue.
Chicken
with Pilaf Ingredients
1 Tbs olive oil
3/4 cup yogurt
2 Tbs lemon juice
1/2 tsp hot paprika
2 cups basmati rice
1 tsp sweet paprika
4 cups chicken stock
1 tsp ground cinnamon
3 cloves crushed garlic
1/2 cup chopped raisins
1 brown onion chopped finely
8 skinless chicken thigh cutlets
3/4 cup chopped fresh coriander

with Pilaf Method
In a large bowl combine the
chicken, juice and spices then cover and refrigerate for 3
hours. Cook the chicken in batches on a heated oiled barbecue
brushing with a little of the yogurt until browned and cooked
through. Meanwhile heat oil in a medium saucepan then add
the onion stirring until softened then add the rice and stir
to coat in the onion mixture then add stock and bring to the
boil. Reduce the heat and simmer covered stirring occasionally
until rice is almost tender then stir in the raisins and let
cook covered for 5 minutes. Stir coriander into pilaf off
the heat just before serving. Top the pilaf with the chicken
and remaining yogurt.
