CHICKEN
STIR FRY RECIPE
This recipe
will teach you how to make Chicken Stir Fry. It is a quick
and easy recipe to make. This is really a sensational stir
fry to make when you are having family or friends over for
a meal. The wonderful flavours of chicken, red pepper, broccoli,
zucchini and carrot then with a great tasting sauce over the
top of ginger, honey, soy sauce, sweet chili sauce and hoisin
sauce is what gives this Chicken Stir Fry its magnificent
taste. I like to serve it over noodles or rice. This is my
grandsons favourite stir fry so I make sure I cook the Chicken
Stir Fry when I know they are coming over for a meal.
Chicken
Stir Fry Ingredients
1 Tbs honey
oil
for cooking
2 Tbs soy sauce
1 carrot chopped
1 Tbs hoisin sauce
1 red pepper sliced
1 Tbs sweet chili sauce
2 tsp grated fresh ginger
2 small zucchini chopped
350g broccoli broken into florets
500g chicken breast fillets thinly sliced
2 tsp cornflour blended with 1 Tbs water
Chicken
Stir Fry Method
Heat a wok and add a small amount
of oil then add the chicken and cook for 3 minutes or until
the chicken is tender. Remove it from the wok and set aside.
To the wok add the red pepper, broccoli, zucchini and carrot
then stir fry for 4 minutes. Stir in the cornflour mixture,
ginger, honey, soy sauce, chili sauce and hoisin sauce and
cook for 3 minutes or until sauce boils and thickens. Return
chicken to wok and stir fry for 2 minutes longer or until
heated through. Serve the Chicken Stir Fry over noodles or
rice.

CHICKEN WITH CURRIED RICE STUFFING RECIPE
This
recipe will teach you how to make Roast Chicken with Curried
Rice Stuffing. It is a quick and easy recipe to make.
Everyone likes a good roast chicken dinner but do you ever
get tired of making the same stuffing all the time well if
you do just try this recipe for Roast Chicken with Curried
Rice Stuffing as the flavour of the stuffing gives this roast
chicken the most sensational flavour. The aroma going through
the house while you are cooking the Roast Chicken with Curried
Rice Stuffing is really magnificent. Served with roast vegetables
and peas just makes this dinner one of the best meals I have
ever had.
Roast Chicken with Curried Rice Stuffing Ingredients
1.5kg chicken
1 Tbs olive oil
155g rice cooked
2 tsp curry powder
4 spring onions chopped
4 rashers bacon chopped
60g soft breadcrumbs made from stale bread
Tomato Sauce:
30g butter
1 Tbs sugar
125mls water
3 Tbs red wine
1 onion chopped
2 Tbs tomato puree
125g mushrooms sliced
440g canned tomatoes
1 green pepper chopped

Chicken with Curried Rice Stuffing Method
Preheat oven to 180 degrees.
Wash the chicken and pat dry with a kitchen towel. In a frying
pan cook the bacon, spring onions and curry powder until bacon
is crisp then remove it from the heat and stir in rice and
breadcrumbs. Fill the chicken with the rice mixture and secure
the opening with a skewer. Place the chicken in a baking dish
and brush with the oil and bake for 1 1/2 hours basting frequently
with the juices from the baking dish. To make the sauce melt
the butter in a saucepan and cook onion, green pepper and
mushrooms for 3 minutes then stir in undrained tomatoes, tomato
puree, wine, sugar and water and season to taste. Cook over
a medium heat stirring occasionally for 10 minutes until sauce
has reduced by a quarter. Cut the Chicken into portions on
plates and spoon the sauce over the top and serve the Roast
Chicken with Curried Rice Stuffing with roast vegetables and
peas.
