WITH FENNEL AND FETA CHEESE RECIPE

Chicken
with Fennel and Feta Cheese Ingredients
2 Tbs olive
oil
1/2 cup cream
2 tsp fresh thyme
1 red onion sliced
3/4 cup chicken stock
2 cloves garlic crushed
salt and pepper to taste
90g feta cheese crumbled
2 small fennel bulbs sliced
4 cups mixed lettuce leaves
3 chicken breast fillets thinly sliced
Chicken
with Fennel and Feta Cheese Method
Heat olive oil in a large wok
and stir fry chicken until browned then remove the chicken
from wok. Add onion and garlic to the wok and stir fry 3 minutes
until onion softens then add fennel and thyme and stir fry
a further 5 minutes. Add chicken, stock and seasoning to the
wok and bring to the boil then reduce heat and simmer 10 minutes
or until fluid has condensed. Add cream and cheese and gently
heat through. Serve the Chicken with Fennel and Feta Cheese
with lettuce.

WITH SHERRY SAUCE RECIPE
This
recipe will teach you how to make Chicken with Sherry Sauce.
It is a quick and easy recipe to make. What
a wonderful unique way of cooking chicken. The flavours of
chicken, mushrooms, sherry, cream and parsley mixed with the
reast of the ingredients and croutons mixed with it is really
a sensational meal especially if you serve it with hot boiled
rice.
Chicken with Sherry Sauce Ingredients
4 oz butter
2 Tbs sherry
1/2 pint stock
1/4 pint cream
1 oz plain flour
salt and pepper
4 chicken joints
2 sprigs parsley
4 oz mushrooms
few slices bread
oil and butter for frying
Chicken
with Sherry Sauce Method
Season the chicken well then
in a frying pan melt the butter and fry the chicken for 25
minutes. Remove and keep hot. Add the mushrooms and cook for
3 minutes then remove and keep to one side. Add the flour
to the remaining fat and mix well and cook for 2 minutes.
Remove the pan from the heat, add the sherry and stock gradually
stirring all the time. Return to the heat and bring to the
boil stirring continually until thickened. Add the cream and
mix and heat through but do not boil. Return the mushrooms
to the sauce and heat through again. Make the croutons by
cutting out shapes from slices of bread using small fancy
cutter. Fry until crisp in oil and butter. Arrange the chicken
on a large serving dish then pour the sauce over and garnish
the Chicken with Sherry Sauce with fried croutons and parsley.
