COCONUT BISCUITS RECIPE
This recipe

as you can make a double lot and freeze the second dough for
another day. The flavour of the coconut in the Cherry Coconut
Biscuit makes the taste linger on in your mouth.

Coconut Biscuits Ingredients
pinch salt
1 egg yolk
4 oz butter
2 Tbs coconut
1 cup plain flour
1 1/2 Tbs icing sugar
1 oz chopped cherries
1/2 tsp vanilla essence

Coconut Biscuits Method
Beat the butter and icing sugar
to a soft cream and then add vanilla, egg yolk, flour and
salt then stir until smooth then add the coconut and cherries.
Turn onto a lightly floured board and knead slightly to make
smooth on the outside.Shape into one long roll about 1 1/2
inches in diameter. Wrap in greased proof paper and place
in the refrigerator to chill. Cut the Cherry Coconut Biscuits
into 1/4 inch slices and place on a greased biscuit tray and
bake for 15 minutes in a moderate oven, 350 degrees. Serve
your Cherry Coconut Biscuits with a great cup of coffee for
afternoon tea.
