EGGPLANT CASSEROLE RECIPE

Eggplant Casserole Ingredients
1 tsp salt
2 Tbs flour
2 Tbs butter
1 Tbs catsup
1/2 tsp pepper
dash of cayenne
2 tsp grated onion
1 medium eggplant
3/4 cup soft breadcrumbs
1/2 tsp worcestershire sauce
1 cup milk at room temperature
6 oz cheddar cheese cut into small pieces
2 eggs slightly beaten at room temperature

Eggplant Casserole Method
Preheat oven to 350 degrees
then butter a 1 1/2 quart casserole dish. Peel and dice the
eggplant then steam until tender then put it in a large bowl
and toss it with breadcrumbs. Melt butter in a medium saucepan
and stir in flour then add milk then cook and stir until thickened.
Stir in onion, catsup and seasonings and add cheese then cook
and stir until melted. Add eggs to sauce stirring constantly.
Combine sauce with eggplant mixture then transfer to prepared
dish and bake the Cheesy Eggplant Casserole for 45 minutes.
