3/4 cup cream
220g cream cheese
3 cups chicken stock
3/4 tsp ground nutmeg
salt and pepper to taste
1 head cauliflower cut into small florets

Cauliflower and Cream Cheese Soup Method

Bring stock and cauliflower to the boil in a large saucepan. Reduce heat and simmer for 20 minutes or until cauliflower is soft. Process stock and cauliflower with cream cheese in a blender until smooth. Return cauliflower puree to the saucepan and add cream, nutmeg and seasoning. Heat the Cauliflower and Cream Cheese Soup through.

Cheesy Potato Soup Ingredients

2 cups milk
2 Tbs cornstarch
2 cups chicken broth
1 cup cheddar cheese
1/4 cup celery chopped
1/4 cup onions chopped
1/2 cup carrots finely shredded
1 cup potatoes peeled and diced



Cheesy Potato Soup Method

In a medium saucepan combine broth, potatoes, carrots, onions and celery and bring them to a boil and then reduce heat. Cover and simmer about 10 minutes or until the vegetables are tender. Stir cornstarch into milk and then add to soup. Add cheese and stir until melted. Serve the Cheesy Potato Soup into soup bowls and top with a little parsley if desired.
