CARROTS IN MUSTARD GLAZE RECIPE

Carrots in Mustard Glaze.

This recipe will teach you how to make Carrots in Mustard Glaze. It is a quick and easy recipe to make. The flavour of these carrots are so magnificent with the combination of carrots, butter, brown sugar, prepared mustard and chopped mint. My husband really enjoys the Carrots in Mustard Glaze with a vegetarian roast, beans and roast potatoes for our Sunday lunch.

Carrots in Mustard Glaze Ingredients

1 Tbs mint
3 lb carrots
1/4 cup butter
boiling salted water
1/2 cup brown sugar
1/4 cup prepared mustard

Carrots in Mustard Glaze Method

Make sure you wash and scrape the carrots really well then cut into slices and cook in salted boiling water until tender. In a small saucepan combine the butter, brown sugar and mustard then cook stirring until butter has melted and the sugar has dissolved then cook for another 3 minutes. Pour this mixture over the cooked and drained carrots and heat for several minutes then add the mint to the Carrots in Mustard Glaze.

CARROTS PIQUANT RECIPE

Carrots Piquant.

This recipe will teach you how to make Carrots Piquant. It is a quick and easy recipe to make. I really like this recipe for Carrots Piquant as it is not as sweet as doing honeyed carrots which my husband likes as the Carrots Piquant has a bit more tangy flavour which I prefer. Our family all have different tastes so I try to please all and do different carrot recipes on different days.

Carrots Piquant Ingredients

1/4 tsp salt
2 dsp butter
dash nutmeg
1 dsp cornflour
1 dsp orange juice
4 cups small whole carrots
chopped parsley for garnishing

Carrots Piquant Method

Scrape the skin off the carrots and cook them whole in salted boiling water then drain reserving 3/4 cup of the cooking water allowing it to become cool. Combine the cornflour, orange juice, salt, nutmeg and the reserved cooking liquid. Cook stirring until the sauce boils and thickens then add the butter and the cooked carrots. Heat thoroughly over low heat and serve the Carrots Piquant sprinkled with chopped parsley.
