BROCCOLI
CASSEROLE RECIPE
Broccoli Casserole is a wonderful
way of cooking broccoli. The flavours of the broccoli with
the mushroom soup, cheese, onion and herb stuffing mix makes
the taste sensational. This is a very nourishing casserole
to make. I like this Broccoli Casserole served in summer with
a side salad and in winter with a warm bread roll.

Casserole Ingredients
2 eggs beaten
3/4 stick butter
1 cup mayonnaise
salt and pepper to taste
1 medium chopped onion
1/2 packet herb stuffing mix
1 can cream of mushroom soup
2 x 10 oz packets frozen broccoli
1 cup grated sharp cheddar cheese

Casserole Method
Put the
broccoli into a saucepan and cover with water and cook till
just tender then drain and chop into small pieces. Combine
the mayonnaise, egg, onion, broccoli and soup and then place
into a casserole dish and sprinkle the cheese on top. Melt
the butter and combine with the stuffing mix and put on top
of the casserole. Bake the Broccoli Casserole for 45 minutes
at 350 degrees.
