BREAD
PUDDING RECIPE
My mother always made Bread
Pudding for us when we were children. When I got older and
microwaves came in I decided to try making Bread Pudding in
the microwave and they turned out just as good as mums and
it cooks much quicker in the microwave. This is also a diabetic
one as one of my family has diabettes.

Pudding Ingredients
1 tsp vanilla
3 Tbs raisins
1 cup skim milk
1 egg well beaten
2 packet artificial sweetener
1 slice white bread cut in cubes

Pudding Method
In a large
bowl add the egg, milk, vanilla and sweetener and beat together.
Spray two 2 cup microwave dishes with non sticking vegetable
spray and then arrange the bread cubes and raisins in dish.
Pour milk mixture over bread to moisten each cube. Sprinkle
dash of nutmeg over top and microwave on high for five minutes
or until knife inserted in center comes out clean. Be careful
not to overcook the Bread Pudding.
