BRAISED
TOPSIDE RECIPE
This Braised Topside makes
a wonderful Sunday lunch for the family. Cooking the Braised
Topside in the microwave is less messy and much more quicker
way of cooking it. Just before it cooks add the potatoes to
the casserole bowl to. The flavours of this sunday roast is
just exceptional.

Topside Ingredients
2 bay leaves
1/2 cup hot water
1 onion quartered
1 beef stock cube
2 kg topside of beef
1 large carrot sliced
2 sliced celery sticks
1 Tbs worcestershire sauce
Braised
Topside Method
Take the meat and trim off
the excess fat and then pierce the meat all over with a skewer
and place in a casserole dish. Dissolve the stock cube in
the hot water and worcestershire sauce and add to the dish.
Cover the Braised Topside and cook on medium for 35 minutes.
Turn the meat and add the vegetables and bay leaves cover
and cook on low for 70 minutes. Leave the Braised Topside
standing covered for 10 minutes. I also add potatoes the same
time as the other vegetables.
