BEEF
AND ORANGE CASSEROLE RECIPE
We
live where there are orange orchids so what better recipe
to share with you than the Beef And Orange Casserole. It has
a wonderful flavour to it and who would of thought of using
orange in a recipe with beef. The Beef And Orange Casserole
is good served with boiled potatoes, carrots and beans. I
think I might just go and put the Beef And Orange Casserole
on for dinner.
Beef And
Orange Casserole Ingredients

Tbs oil
2 oranges
1 onion sliced
2 cups hard cider
1/4 cup cornstarch
salt and freshly ground pepper
2 beef bouillon cubes crumbled
1 green pepper seeded and sliced
1 1/2 lb shoulder beef cut into cubes

Orange Casserole Method
First
thing to do is season the cornstarch with salt and pepper
and then toss the meat in the seasoned cornstarch. Heat 1
tablespoon of the oil in a pan and gently fry the meat until
browned and then place it in a casserole bowl. Fry the onion
and green pepper in the remaining oil for 3 minutes and add
to the meat.
Using a potato peeler peel the rind from one orange taking
care to avoid the white pith and cut the rind into thin strips.
Blend any remaining seasoned cornstarch with a little cider,
the stock cube and the juice of both oranges. Bring to the
boil stirring continuously. Reserve a little orange rind for
garnish, then stir in the rest and pour the mixture over the
Beef And Orange Casserole. Cover and cook the Beef And Orange
Casserole in a preheated moderate oven for 2 hours. Serve
garnished with the reserved strips of orange rind.
