BANANA
MERINGUE PIE RECIPE
This Banana Meringue Pie is
a good pie if you like bananas and meringue. There is no need
to serve anything with the Banana Meringue Pie to accompany
it as it is rich enough on its own. And the Banana Meringue
Pie looks really good when you slice it and you see the colours
at the side of the bananas and white meringue.

Meringue Pie Ingredients
1 tsp vanilla
1 pinch salt
1 egg beaten
6 ripe bananas
1 Tbs cornstarch
2 Tbs granulated sugar
1/2 cup warm light cream
1/2 cup granulated sugar
1/3 cup granulated Sugar
1 1/4 cups all purpose flour
6 Tbs cold unsalted butter diced
4 egg whites, room temperature

Meringue Pie Method
First thing
to do is to make the pastry now combine flour, sugar and butter
in a food processor. Process until it is very fine then add
the beaten egg and continue to process just until dough starts
to come together. Roll it into a ball and wrap it in plastic
wrap and refrigerate for one hour to chill. Roll out dough
on a floured surface to a 11 inch circle. If the dough is
sticky and falls apart just patch together and fit into a
nine inch pie plate and chill for 30 minutes.
Set the oven to 375 degrees
and bake the pastry shell for 12 minutes until light golden
in colour. Thinly slice five of the bananas and arrange on
the bottom of the pastry shell and then mash the remaining
banana and combine it with the warm cream, 1/2 cup sugar,
cornstarch and vanilla. Pour this mixture over the banana
layer. Bake at 350 degrees for 35 minutes or until filling
is set. Let pie cool slightly. To make the meringue beat egg
whites with a pinch of salt until soft peaks form. Gradually
beat in 1/3 cup sugar until meringue is stiff and glossy.
Spread meringue over warm pie and bake the Banana Meringue
Pie at 350 degrees for 15 minutes or until golden. Let cool
and refrigerate until serving time.
