AVOCADO
SORBET RECIPE
Have you ever heard of making
a dessert with avocados, well here it is Avocado Sorbet. Just
go and make the Avocado Sorbet and see how great it tastes.
You can have it plain or add raspberries with it. My grand
children love it with a lovely chocolate crisp biscuit. My
husband enjoys the Avocado Sorbet so much he usually comes
back for a second helping so make sure you make plenty of
the Avocado Sorbet.

Sorbet Ingredients
1 cup sugar
2 cups water
1 cup light corn syrup
2 Tbs lemon juice
1 Tbs lime juice
1 tsp grated lime peel
3 avocados seeded peeled and mashed
fresh raspberries and crisp cookies

Sorbet Method
In a large
saucepan bring the sugar, corn syrup and water to boil then
remove it from the heat and stir in the lime peel then let
it cool for 50 minutes. In a blender add the avocados and
lemon and lime juice and blend until smooth then add cooled
sugar mixture and blend until thoroughly combined. Pour into
13 x 9 x 2 inch pan so depth is about 1/2 inch. Now freeze
the Avocado Sorbet for 1 hour and then remove it from the
freezer and beat for 3 minutes until light and creamy. Pour
the Avocado Sorbet back into the pan and cover with plastic
wrap and freeze until firm about 4 hours. Serve the Avocado
Sorbet with fresh raspberries and crisp cookies. This is a
wonderful dessert the whole family will enjoy.
