CREAMY ASPARAGUS SOUP RECIPE

This recipe
will teach you how to make Creamy Asparagus Soup. It is a
quick and easy recipe to make.
Non of my children or grandchildren will eat asparagus but
what they do not know is that I cook up the soup with asparagus
in it and they eat it. The taste is so fantastic and to serve
hot garlic bread with the Creamy Asparagus Soup makes it just
perfect.
Creamy
Asparagus Soup Ingredients
1 Tbs butter
1/2 cup cream
1 small onion chopped
1 stick celery chopped
salt and pepper to taste
2 1/2 cups chicken stock
16 spears asparagus chopped
1 1/2 Tbs snipped fresh chives
extra cream and chives to garnish

Asparagus Soup Method
Heat butter in a large saucepan
then add onion and celery and fry 5 minutes until brown and
soft. Add stock and asparagus and bring to the boil then reduce
heat and simmer for 30 minutes or until asparagus is very
soft. Process stock and asparagus in a blender until smooth.
Return asparagus puree to saucepan. Add cream, chives and
seasoning. Blend and heat gently until warmed through. Serve
the Creamy Asparagus Soup garnished with a dollop of cream
and fresh chives.

CREAMY
MUSHROOM SOUP RECIPE
This
recipe will teach you how to make Creamy Mushroom Soup. It
is a quick and easy recipe to make.
This is my favourite soup as I really love mushrooms and I
usually cut up extra mushrooms to put on top as it looks fantastic
with mushrooms floating on top. I know a lot of my friends
and family like it with sour cream and parsley on top.
Creamy Mushroom Soup Ingredients
4 Tbs butter
1 cup cream
3/4 tsp all spice
4 cups chicken stock
1 clove garlic crushed
salt and pepper to taste
1 Tbs fresh parsley finely chopped
sour cream and fresh parsley to garnish
500g mushrooms peeled and roughly chopped

Mushroom Soup Method
Melt butter in a large saucepan
then add mushrooms and garlic and cook for 5 minutes or until
mushrooms are soft. Add stock to mushrooms and bring to the
boil and reduce heat and simmer for 15 minutes. Process mushrooms
and stock in a blender until smooth. Return mushroom puree
to the saucepan and add cream, all spice, parsley and seasoning
and heat through. Serve garnished with dollop of sour cream
and sprigs of fresh parsley.
