APRICOT
ALMOND BISCUITS RECIPE
Apricot Almond Biscuits is
one of my favourite biscuits as I love the flavour of apricot
and my favourite nut is almond. We have our own apricots and
almonds growing. You can make a double batch of the Apricot
Almond Biscuits as they freeze well and that way you have
more for later or for school lunches.

Almond Biscuits Ingredients
1/2 cup dried apricots
1/4 cup sugar
4 oz butter
1/3 cup sugar
halves blanched almonds
1 cup plain flour
1 egg yolk
pinch salt
1/4 tsp almond essence

Almond Biscuits Method
In a large
bowl soak the apricots overnight in cold water. Next morning
drain and mash them. Put the apricots in a saucepan and add
1/4 cup sugar and cook over medium heat until thick stiring
constantly then set aside. Cream the butter with 1/3 cup sugar,
egg yolk and almond essence beating well. Stir in the flour
and salt, mixing well. Now take pieces of the dough and shape
into balls about 1 inch in diameter. Place 2 inches apart
on a greased tray. With your thumb make an indentation in
the top of each ball of dough. In a slow oven at 300 degrees
bake the Apricot Almond Biscuits for 25 minutes or until golden.
Put the Apricot Almond Biscuits onto a wire cooler and while
still warm fill the centres with the cooled apricot mixture
and put half of an almond on top.
