AMARETTO
PEACH ICE CREAM RECIPE
This recipe
will teach you how to make Amaretto Peach Ice Cream. It is
an easy recipe to make. What
a fantastic tasting ice cream the Amaretto Peach Ice Cream
is. The flavours of peach, amaretto biscuits and amaretto
are just some of the sensational ingredients that go into
making this tantalising ice cream. If you are not sure what
amaretto is I will tell you. It is a sweet liqueur.
Amaretto
Peach Ice Cream Ingredients
1 1/2 lb peeled peaches, pitted
and sliced
2 Tbs fresh lemon juice
1 cup granulated sugar
1 cup crumbled amaretto cookies
2 cups well chilled heavy cream
3 Tbs Amaretto
2 tsp vanilla extract
6 egg yolks

Peach Ice Cream Method
Toss the
peaches in 1/4 cup sugar and lemon juice in a bowl and let
this mixture stand for 30 minutes. After 30 minutes drain
the peaches and puree them. Combine the rest of the sugar
with a 1/4 cup water in a saucepan and bring it to the boil
over moderate heat, brushing down the sides of the saucepan
with a pastry brush that has been dipped in cold water and
keep simmering the syrup till it is a golden color. Now mix
1/2 cup boiling water being very careful as the mixture will
bubble a real lot and keep simmering this mixture until the
caramel has dissolved.
Sprinkle the cookies with amaretto in a small bowl and let
it stand for about 5 minutes. Then in a large bowl beat the
egg yolks until they are pale and thick and add the syrup
in a stream. Make sure you keep beating as you add the syrup
and keep beating the mixture till it cools. Add to this mixture
the peach puree, cookie mixture, cream and vanilla. Freeze
the mixture in an ice cream maker.
