ALMOND
TOPPED PEAR PIE RECIPE
This is quite a different pie
to make but the flavour of the Almond Topped Pear Pie is excellent.
I'm sure anyone who tries this recipe will want more of it.
The Almond Topped Pear Pie can be served with lovely fresh
whipped cream or vanilla icecream.

Topped Pear Pie Ingredients
3 Tbs cornstarch
1/4 tsp ground ginger
1/8 tsp salt
1/2 cup dark corn syrup
2 Tbs melted butter
1 tsp lemon juice
1/2 tsp lemon rind grated
1 unbaked 9 inch pie shell
4 pears medium
Topping:
1 cup unbleached flour
1/2 cup firmly packed brown sugar
1/4 tsp ground ginger
1/2 cup butter
1/2 cup coarsely chopped almonds

Topped Pear Pie Method
First thing
to do is to remove the skin from the pears and slice them
thinly. Combine the first 7 ingredients together and add the
pears and stir around until the pears are well coated with
the syrup mixture. Place the mixture into the unbaked pie
shell. Next thing to do is make the almond topping. Now cut
up the butter and mix flour, sugar and ginger all in a bowl.
Blend until crumbly either with a pastry blender or the tips
of your fingers and then stir in the almonds and add this
mixture onto the top of the pie mixture in the pie shell.
In a preheated moderate oven 350 degrees place the Almond
Topped Pear Pie and cook for 30 minutes or until the shell
is cooked and the top of the pie is golden. This pie is great
served with cream or ice cream.
