ALMOND
PEACH RUSSE RECIPE
Almond Peach Russe that sound
just so wonderful and it sounds like it would be hard to make,
but believe me the Almond Peach Russe is very easy to make.You
can use different fruit on top of the Almond Peach Russe if
you want to. If I use the strawberry jelly I usually put a
few strawberries on top with the peaches just to add colour
and my grand children really thinks its great.

Peach Russe Ingredients
1 sponge layer made in an 8
inch tin
1 packet strawberry jelly
2 cups boiling water
16 sponge fingers
3 tsp gelatine
1/4 cup water
1/2 pint cream
1/2 oz castor sugar
1 large can peach halves
1/4 pint milk
1 tsp lemon juice
1 tsp almond essence
extra whipped cream for garnishing

Peach Russe Method
Line the base and sides of
a deep sided 8 inch spring form pan with foil. Place the sponge
layer in the bottom of the pan. With boiling water make the
jelly and allow it to cool to where it is beginning to set.
Take half the jelly and spoon over the cake layer and then
chill it until its firm. Make sure you keep the remainder
of the jelly at room temperature. Take the sponge fingers
and cut them in half and stand them up around the edge of
the pan with the ends touching the jelly. Take a knife and
trim the top of the sponge fingers level to the top of the
pan. Now take the gelatine and mix it in a 1/4 cup of water
and then dissolve it over hot water.
Whip the cream and add the milk, sugar, lemon juice and almond
essence, then a little at a time stir in the gelatine. Let
this mixture chill until it is beginning to set and then spoon
it over the jelly in the pan and then let it set. Take half
the peaches and chop them and then place them on top of the
gelatine mixture in pan and then add the remaining jelly on
top of that. Allow this to set then add the remainder of the
cream mixture and chill. Unmould and peel off the foil just
before serving it, Then put the remaining peaches on top and
decorate your Almond Peach Russe with sweetened whipped cream.
